This product preserves the ancient tradition of drying tomatoes on open-air frames. Our cherry tomatoes, hand-picked in July, are prepared using an age-old recipe: halved, salted, and laid out to dry on frames under the warm summer sun—no machines, just nature at work.
This slow, artisanal process, takes 4–5 days to complete. Once dried, we hand-select the finest tomatoes, wash them and season them with capers, a touch of chilli pepper, and fresh mint, before preserving them in oil. Juicy and delicate, these sun-dried cherry tomatoes add vibrant flavour to pizza, bruschette, or even a simple caprese salad.
