Grown in the open fields of Salento, the raw artichokes with stems come from the region's fertile countryside. We've selected the Violet variety, native to the Brindisi area, for a specific reason: its extraordinary crispness and rich, distinctive flavour. The name comes from the purple colour of the outer leaves and heart, which appears when the artichokes reach peak ripeness in March.
At that point, it's time to harvest. We handle and bottle the artichokes within 8 hours of picking. Every step is done by hand, using the same simple process our grandmas used when making preserves at home.
After removing the outer leaves and carefully cleaning them with a paring knife, we preserve the artichokes in a simple pickle of oil, cider vinegar, unrefined salt, and lemon juice— without artificial preservatives or spices, allowing the natural flavour of the vegetables to stand out.
Not only are they delicious, but they're also visually stunning. These artichokes are perfect for an aperitivo, or as a flavourful addition to risottos. Ready to enjoy straight from the jar, they're also perfect for seasoning pizzas and salads, or for adding to pasta and main dishes.
Our artichokes, of the Brindisi Violet variety, are bottled in oil with no added flavourings.
