In Apulia, tomatoes are more than just a vegetable—they're a tradition. When the sun gently dries them on open-air frames, their aroma intensifies, and their flavour deepens. This is how we create our pesto, starting with sun-dried tomatoes grown in open fields and carefully hand-picked.
The slow, natural drying process preserves all the qualities of freshly harvested tomatoes. We then blend them with Parmigiano, almonds, and basil, crafting a creamy pesto with a bold, rustic character. Perfect for pairing with orecchiette or other artisanal pasta dishes.
