Cherry peppers, naturally sweet, round, and petite, are sown in May and harvested at their peak in late August, when they've ripened to vibrant red. Our skilled workers handle the fresh peppers with care, removing their stalks and seeds before soaking them in a water-and-vinegar solution. The final touch? Each pepper is carefully filled by hand with premium Mediterranean tuna and Racale capers from our caper bed, a celebrated Apulian speciality recognized by Gambero Rosso.
