We don' use just any artichoke—we use the Brindisi Violet, a local variety from Salento, carefully grown and harvested in our own fields. This particular artichoke was chosen for its tender texture and delicate flavour, which shines through in every jar of our pâté.
The secret to this jar is its simplicity. We use only the freshest artichokes, processed within hours of harvest, then crush and season them with olive oil, salt, and lemon juice. No vinegar, no artificial flavours, no preservatives—just pure, authentic artichoke flavour. Simply add croutons and enjoy a taste of the real thing.
