This sun-dried tomato pâté is a true taste of Salento. Its deep red colour will remind you of the fertile soil nurturing our garden. The moment you taste it, you'll experience the motions of our grandfather, gathering long tomatoes in the summer sun, and our grandmother, carefully slicing them and placing them on open-air frames to dry. We continue this tradition today on our farm, using the same methods to create a sun-dried tomato pâté steeped in heritage.
We do everything by hand, in tune with nature's rhythm. After 3-4 days of sun-drying, we wash the tomatoes with water and vinegar before crushing them together with capers from Racale. The result is a rustic, smooth pâté that's perfect on croutons or as a base for a frisa, adding a hearty, authentic touch to dinners and aperitivo.
