Thanks to its coarser texture compared to traditional pâté, this country-style mixed vegetable pâté is a true treasure chest of summer's finest offerings from our vegetable garden: eggplants, zucchini, tomatoes, and onions. These vegetables are grown in Salento between April and May and hand-picked at their peak maturity from June to September.
Our workers handle each vegetable with meticulous care, washing, selecting, and hand-cutting them. Watching them work feels like stepping into grandma's kitchen. The vegetables in our country-style mixed vegetables pâté are then sun-dried on open-air frames for 3-4 days. Once dried, we chop them and season them with crushed capers and pitted Leccine olives. A true vegetable garden in a jar, ready to spread on bruschette and frise or use as a sandwich filling.
