Soft and fleshy, they are among the most traditional and versatile olives. Grown in the heart of Apulia's olive groves, near Bari, they are hand-harvested using time-honoured methods between October and November.
We preserve them in brine for 6 months to remove bitterness without using artificial preservatives. The result is our Termite di Bitetto olives: a simple, authentic product with a flavour that balances sweetness and a pleasant tang. They're hard to resist during aperitivo, often disappearing one by one! Try them in two must-try Apulian recipes: fried olives or stewed cod.
